Delicious and Nutritious Oatmeal

 
Hey guys, I have such a busy schedule between school and work, so one of my favorite things to invent is quick and easy snacks. One of my favorites is oatmeal. I am still working on finding a brand of gluten-free rolled oats that I really like, but for now I have been using Bob's Red Mill. This snack is super filling and could almost be a meal in itself, so half the recipe if you are just looking for a little snack or eating because you are bored, which I am a victim of! I love food!

Here's what you need:
  • 1 cup rolled oats
  • 2 tablespoons pure maple syrup
  • a pinch of salt
  • about 3 shakes of cinnamon
  • chopped up fruit (I like apple, dates, and blueberries)
  • chopped up nuts (I usually don't put nuts in mine, but if you love nuts, I'd try walnuts or even almonds)
Boil a small amount of water on the stove, just enough to cover your oatmeal in a bowl. Pour the rolled oats, maple syrup, salt, and cinnamon into a bowl. Cut up your fruit and nuts into small bite-size pieces and add them to the bowl of oats. I cut up about half an apple and five dates. If you want blueberries, I throw in about a handful. When your water is boiling, pour just enough to cover the oats into the bowl. Cover the bowl with a lid or plate and let sit for several minutes to allow the oats to absorb the water. If you are using gluten-free oats, it will take longer. Once the water has mostly absorbed, stir and eat it while it's hot!
